Zucchini Crust Recipe

Low carb dieting is all the craze right now. Some of the recipes sound totally disgusting and I would never try them, but I have been on a zucchini kick recently so I thought I would try a zucchini crust recipe. Tonight I attempted to make a zucchini crust pizza casserole, I know it sounds gross but it actually turned out very good and my extremely picky boyfriend even said he would eat it again!

This recipe can be used for just about anything needing a crust; I think it could be used well in most casseroles as a replacement for the carb.

Ingredients:

4 c. grated zucchini

4 egg whites

1 c. shredded cheese (I used mozzarella and cheddar cheese)

Salt, Pepper, Garlic Powder (to taste)

Directions:

Grate the zucchini and place in a bowl with about 2 tsp. of salt let this set for 10 minutes, then squeeze the excess moisture out of the zucchini. Mix the remaining ingredients together and press into a glass-baking dish. Bake in the oven at 400° for 20 minutes or until golden brown.

I added pizza sauce, crumbled turkey sausage, and a lot of veggies (onions, peppers, mushrooms, olives) and a little extra cheese and put it back into the oven for about 15 minutes to make a low carb pizza!
