Tortilla Chicken Soup


Unfortunately we have been battling the flu at our house this weekend which means a lot of soup! I decided to make a variation of a tortilla soup with what I had in the fridge and it was amazing! Check out the recipe below.


4 c. Low Sodium Chicken Stock

12 oz shredded chicken (I used a rotisserie chicken)

1 can rotel

1 Taco Seasoning Packet

1/2 Green Pepper (diced)

1/2 Red Pepper (diced)

1/4 Onion (diced)

1 tbls Minced Garlic

1 can Whole Green Chilis (diced)

8 oz Fat Free Cream Cheese

1 Avocado

Sour Cream


Begin by sautéing onions and peppers with minced garlic in the bottom of a dutch oven. Once vegetables are soft add the chicken, rotel, seasoning packet, and chilis. Simmer for 30 minutes (or longer) add cream cheese 10 minutes before serving to let melt. Top your soup with avocado and sour cream and serve immediately.
