Taco Bake

Tonight I was looking for a new recipe and after scouring the internet I found a recipe from a blog called Sweet C’s for a one pot taco skillet. I was drawn to this recipe because I could easily make it for my self and have a low carb dinner but my boyfriend could add rice and have an awesome meal for himself! And lets be serious, it looked easy! I changed a few things, I used ground turkey, spinach instead of kale because kale is something I can’t make myself like, and who has green onions so I just left them out! Below I will list the recipe how I made it, let me know if you give it a try! We really enjoyed it!!
Ingredients:
12 oz Ground Turkey
2 Bell Peppers, diced
½ Yellow Onion, diced
1 can Rotel
Trader Joes Taco Seasoning
5 cups Spinach (I LOVE spinach)
1 c. Fiesta Blend Shredded Cheese
Directions:
Brown the ground turkey, and drain excess fat. Add onions and peppers and cook until browned, add canned tomatoes, seasoning and mix. Add spinach and let wilt mix well and then cover with shredded cheese and let melt. I served mine over some extra wilted spinach and my boyfriend served his over a bed of rice.
