Stuffed Mushroom Recipe

How do you all decide on a recipe for dinner? I might be weird but I usually start with one ingredient that sounds good and go from there. Todays recipe started just that way! I had Italian sausage that I didn't want to go to waste so after thinking for a while I decided stuffed mushrooms would be a good way to use it! Below is the recipe, we used this as our entire dinner, but you could use mushroom caps and make this as an appetizer or a side dish very easily!


1/2 lbs Italian Sausage (brown and drain)

4 Portobello Mushrooms

1 Red Pepper (seeds removed)

1 tbls Olive Oil

2 tbls shredded Parmesan

1/2 Onion

1 tbls minced Garlic

1 tbls Italian Seasoning

Salt and Pepper to taste


Preheat the oven to 400°. Begin by browning the Italian sausage and draining the excess fat. While the sausage is browning remove the mushroom steams and set aside, then remove the gills from the mushroom by scraping with a spoon. Add the mushroom steams, onion, and red pepper to a food processor and chop. After the sausage has been drained add it back into the pan, add all seasonings, garlic, and everything from the food processor and let cook for 2-3 minutes. Line a baking dish with parchment paper and place the mushrooms on top. Drizzle the mushrooms with olive oil then "stuff" with the sausage mixture. Top with parmesan cheese and bake for 15-18 minutes.
