Stuffed Mushroom Recipe

Happy Wednesday! The week is officially half way over, thank gosh! For some reason this week is dragging on, I blame it on that Chiefs football game! Last night we were looking for a new recipe for veggies on the grill. Typically we just do veggies marinated in balsamic vinaigrette but thats getting a little old! I decided to give stuffed portobello mushrooms a try. I have been hesitant to try them because I figure they would be a huge mess and all the stuffing would run all over the grill, well I am happy to report it did not! Well lets get to the recipe.

Ingredients:

(serves 4)

4 oz Fat Free Cream Cheese

1 c. Shredded Cheese (we used colby jack)

4 c. Spinach

2 tbls Minced Garlic

Salt and Pepper to taste

1 tbls Olive Oil

4 Portobello Mushrooms

Directions:

Begin by cleaning the mushrooms with a dry paper towel (do not rinse with water) next remove the steam and use a spoon to remove the insides of the mushroom. Sauté the spinach and add cheeses, spinach, garlic, salt and pepper to a bowl stir until well mixed. Brush the mushrooms with olive oil and then fill with the cheese filling. Grill the mushrooms over medium heat for 10-12 minutes. Remove from the grill with a spatula to prevent the filling from spilling out.
