Steak Pinwheels


Don't you just love when you throw together a meal and it turns out amazing?!? Thats exactly what happened last week, I had planned to make lettuce wrap steak tacos but I forgot to purchase romaine lettuce at the grocery store earlier in the week. I hate going to the grocery store once a week I sure as heck wasn't going back a second time! I started brain storming what to do with the flank steak and peppers, I quickly remembered a recipe my fiancé's mom made last summer. She used chicken and wrapped it around fajitas and grilled it on the outdoor grill. I decided I would give it a try with the flank steak, the recipe is listed below. It was amazing and very quick, let us know if you give it a try!


1 lb Flank Steak (ask them to cut it thin)

1 oz. Cotija Cheese

1/2 Onion (cut into slices)

1/2 Green Pepper (cut into slices)

1/2 Red Pepper (cut into slices)

1 tbls. Olive Oil

1 tsp. Garlic Powder

1 tsp. Red Pepper

1 tsp. Oregano

1 tsp. Ground Cumin

1 tsp. Chili Powder

Salt and Pepper


Preheat the oven to 350° and begin by sautéing your peppers and onion in a cast iron skillet. While the peppers are sautéing pound your flank steak so it is as thin as possible combine all the seasonings (a steak rub I found from Rachel Ray and used what we had) and rub onto the flank steak. Once the fajitas are complete lay them across the steak leaving about 1 inch on each side, then sprinkle the cotija cheese over the top. Begin rolling your steak as tightly as possibly and secure with wooden skewers about 1 inch apart. Slice the steak between the skewers. Heat the cast iron skillet over high heat and add 1 tbls olive oil. Place the pin wheels in the cast iron skillet and sear for 1 minute, flip and sear on the other side for 1 minute. Next bake for 6 minutes to complete cooking.

We made a dipping sauce in the food processor with 1/2 c. sour cream, 1 can diced green chilis, and the juice of 1 lime.
