Spaghetti Squash and Shrimp

Oh man do I have a super simple recipe for you today. Last night after getting home late from work I was digging through the fridge trying to find something to throw together for dinner. I found a spaghetti squash that I forgot I had put in the bottom crisper in my fridge (spaghetti squash stay fresh forever) and started looking for ground turkey to make spaghetti. After searching for a while I discovered I didn't have any so I decided to try spaghetti with shrimp and let me tell you, it was amazing! Below is the recipe that took me less then 20 minutes to throw together (which lets be honest is even quicker then going out and picking up take out)

Serves 2:

Ingredients:

Medium Spaghetti Squash

1 lb of frozen tail removed shrimp

1 1/2 c. Spaghetti Sauce (we love Trader Joes)

1 tbls Minced Garlic

1 tbls Olive Oil

Directions:

Pierce the spaghetti squash with a knife and place in microwave for 12-15 minutes (until soft) remove from micro wave and cut in half. Scoop the seeds out and then shred the squash into a bowl. Be very careful it is extremely hot. We use a silicon oven mit to handle the squash. While the squash is cooking add olive oil and garlic to pan and sauté until garlic is fragrant add the shrimp and cook until opaque. Complete this recipe my combining the shrimp, squash, and spaghetti sauce in the pan and heating through. We served ours topped with parmesan cheese and it was great!
