Shrimp Ceviche Recipe


On New Years Eve we decided to stay home and cook a nice dinner instead of fighting the crowds. We decided to make one of our favorite restaurant appetizers, shrimp ceviche! it turned out great and was extremely simple.

Ingredients: (serves 6-8 for appetizer)

1 lb pealed shrimp

1 cucumber (seeds removed, peeled, and diced)

1 avocado (cubed)

1/2 cup diced red onion

2 serrano peppers (seeds removed and diced)

1 c. diced tomato

1 tbls chopped cilantro

1/4 c. Olive Oil

1/4 teas. salt

2 lemons

2 limes

2 oranges


Begin by bringing salted water to a boil, add shrimp and turn off heat. Let shrimp sit for 3 minutes then remove and run under cold water to stop cooking. Chop shrimp into 1/2 inch pieces and place in a glass bowl. Add juice from the lemons, limes, and oranges and stir in cucumber, onion, and chili's. Refrigerate for 1 hour. After letting sit for one hour add tomato, avocado, chopped cilantro, oil, and salt. Let stand at room temperature for 30 minutes before serving.

We served ours with lime tortilla chips but it was also good to eat with a spoon! Let us know if you give this recipe a try!
