Salmon Sushi Bowl


I have a great recipe for sushi lovers that doesn't require the tedious task of rolling sushi. Sushi bowls are the perfect way to get all the same flavors from sushi without the extra work. Let us know if you try the recipe!


2 salmon fillets

Trader Joe's Frozen Cauliflower Rice

2 tbls. Teriyakı sauce

2 tbls. Minced Garlic

1 tbls Sesame Oil

1 tbls. Sweet Thai Chili sauce

1/2 c. Grated Carrot

1/2 c. Chopped Green Onion

1/2 c. Chopped Seedless Cucumbers


Preheat the oven to 400°. Place salmon fillets in oiled casserole dish, whisk 1/2 tbls. sesame oil and 1 tbls. garlic together and pour over salmon. Bake salmon for 18-22 minutes depending on thickness. While the salmon is baking, heat 1/2 tbls. sesame oil and 1 tbls garlic, add riced cauliflower and sauté covered for 4 minutes. Then add carrot, green onions, and teriyaki sauce and sauté on low for 3-5 minutes until cauliflower is soft.

Place rice in two bowls add the cucumbers and then place a salmon filet on top. Drizzle with Sweet Thai Chili sauce and serve immediately.
