Roasted Chicken and Veggies Recipe


I already shared this picture with you all on Tuesday so today I wanted to share the actual recipe. This is possibly the easiest recipe ever! Just a little chopping and tossing it all together and you have a healthy dinner packed with protein and vegetables. We used pretty much any vegetable we had left over in the fridge (not sure where those carrots came from) so just pick and choose which vegetables you and your family enjoy. So lets get to the actual recipe.
Vegetables of your choice, we used the following;
2 Carrots
1 Large Turnip
1 Zucchini
½ Onion
Chicken drumsticks (we used 5 and had 1 left over)
3 tbls Balsamic Vinegar
1 tsp Minced garlic
1 tsp Basil
1 tsp Oregano
Salt and Pepper to taste
2 tbls Olive Oil
Preheat the oven at 425°. Chop the veggies into small bite size pieces. Mix vinegar, garlic, herbs, salt and pepper, and 1 tbls olive oil and toss together and place on a baking dish. Next rub the chicken drumsticks with the left over olive oil and place them on top of the bed of vegetables. Bake at 425° for 1 hour stirring the vegetables once. Remove from the oven and let sit for 5 minutes. Then enjoy!!
