“Pancake” Recipe

Time for a healthy (and easy!) recipe. Last night while trying to come up with a quick and easy dinner I decided to try breakfast for dinner. Obviously my boyfriend wanted pancakes, I didn’t think a plate full of carbs would be good for me so I scanned the Internet for some sort of different option and I came across a “pancake” recipe using cream cheese and eggs. I know this sounds crazy but it was actually really good! We paired our pancakes with a few eggs and some turkey bacon and we had a simple and quick dinner.
2oz cream cheese
3 egg whites
1 packet of stevia
1/2 teaspoon cinnamon
Throw all the ingredients in a blender and blend until smooth. Let it rest until the bubbles go away then pour into a skillet just like you would normal pancakes. Make sure your skillet is greased and warm, cook about 2 minutes then flip. I will be honest and say that my first pancake ended up being a hot mess so it might take a little trial and error.
