Oh man, do I have a great recipe for you today...healthy fried chicken! I know what you're thinking, it can't taste like the real thing, but let me tell you it actually does! Let's get to it..


serves 2

1/2 c. Egg Beaters

2 Chicken Breast

2 c. Pork Rinds (we used spicy pork rinds to give the chicken a little more flavor but you can use whatever you like)

1/4 c. Shredded Parmesan Cheese

Salt and Pepper


Preheat your oven to 400°. Place pork rinds in a ziplock bag and crush them into tiny pieces (the more crushed the better) Add pork rinds and parmesan to a bowl and then place egg beaters in another bowl and season with salt and pepper. Line a sheet pan with parchment paper and have close by. Dredge your chicken breasts in egg mixture then into the pork rinds and place on the parchment paper. Bake for 15 minutes and then broil for 3 additional minutes. Remove from the oven and let sit for 5 minutes before serving.
