No Carb Pasta

Low carb diets have been around for a long time but recently no carb pastas have become increasingly popular. The way we cut the carbs in these pasta recipes is replacing vegetables for the pasta. The most common vegetables used are zucchini, carrots, and spaghetti squash as a replacement for spaghetti pasta, cauliflower for a replacement for rice and or smaller shaped noodles like elbow noodles, and broccoli slaw and cabbage can also be used for a pasta substitute. To use zucchini and carrots as spaghetti you will need a vegetable spiralizer to make the vegetables into a noodle shape. I think using vegetables is an amazing option for people practicing a low carb life style or even a paleo diet; it is an easy way to add extra vegetables to your diet. I was talking to a client about zoodle (zucchini noodles) recipes and she told me that she would mix normal pasta and zoodles for her kids. She said they never even noticed the zoodles since they were mixed in with the sauce. What a great way to get your kids to eat more vegetables! We have attempted to use all of these vegetables for a pasta substitute except for carrots…I do not like cooked carrots so I cannot imagine I would ever like carrot pasta! We have made zoodles (zucchini noodles) many times and can pretty much substitute them for any noodle. We also use spaghetti squash all the time to make spaghetti and meatballs, which is one of our favorite recipes. We have also used broccoli slaw and cabbage in some dishes. I do not think these replace pasta at all but I have enjoyed them as more of a filler to add to stir fries and recipes like that. I hope this helps you to give these pasta substitutes a try!
