Mushroom Fries

It's recipe time! If you know me you know I am obsessed with FRIES....they are absolutely my biggest weakness! Obviously french fries are not the healthiest option so I do not eat them very often, but that doesn't mean I do not crave them! On days I am craving french fries I usually try a variation of fries. Sweet potato fries are great and I have shared a recipe for turnip fries on the blog but this week I wanted to try portobello mushroom fries! These were great, and the next time we make them I want to try to make some sort of creamy sauce to go with them! Let me know if you have any ideas on a good (and easy) sauce recipe!

Ingredients:

2 portobello mushrooms

2 eggs

1/4 c. Bread Crumbs

1/4 c. Parmesan Cheese

1 tbls Italian Seasoning

Directions:

Start by preheating the oven to 425° cover a baking sheet with parchment paper and set aside. Clean the mushrooms with a paper towel (no water) and remove the gills, cut the portobello mushrooms into 1/2 inch slices. In a large bowl, mix bread crumbs, parmesan cheese, and Italian seasoning. In another bowl, whisk your 2 eggs together with 1 tbls water. Next dredge your mushrooms through the egg mixture and then the bread crumb mixture. Place on the baking dish making sure they do not touch and cook for 15-20 minutes....You can attempt to flip them, but we did not have any luck! After the mushrooms are finished, sprinkle some extra parmesan cheese on top and season with salt and pepper.
