Mexican Chicken Soup


Literally the easiest recipe ever and it's perfect for a cold night.


12 oz Shredded Chicken

1 can Rotel

1 can Diced Green Chilis

1 1/2 c/ Chicken Stock

Taco Seasoning (I use chili powder, cumin, paprika, garlic powder, and cayenne but you can also buy it from the store!)

4 oz Cream Cheese

You can add extra veggies also, we usually add corn and fajita peppers but you could do just about anything!


Simmer your chicken, rotten, chilis, chicken stock, seasoning, and any added veggies for up to one hour in a large pot. Once ready to each add the cream cheese and cook until melted. We top our soup with shredded cheese, avocado, sour cream, and hot sauce but you could also add tortilla chips!
