Memorial Day Recipes

Can you believe it is already Memorial Weekend! This year we get to spend the weekend attending the wedding of my boyfriends brother and fiancé, we can't wait! I know many of you will be headed to the lake to enjoy some time in the sun. I wanted to share a few of my quick recipes that allow you to continue your diet even over a holiday weekend.

Grilled Corn:

Ingredients:

Corn on the Cob

Butter

Cotija Cheese

Salt and Pepper

Cayenne Pepper

Directions:

Wrap corn in aluminum foil, add 1 tbls butter, salt and pepper, and a dash of cayenne. Grill for 18 minutes. Immediately remove from the grill and sprinkle with cotija cheese and serve immediately.

Tomato and Cucumber Salad:

Ingredients:

2 seedless cucumbers (get seedless, it makes it way less mushy)

1 large tomato

1/2 sweet onion

1 c. Fat Free Italian Dressing

Directions:

Dice cucumbers, onion, and tomato and then toss in a bowl with the dressing.

Jalopeno Poppers:

Ingredients:

8 slices bacon cut in half

8 jalapeños

1 package cream cheese

1 tbls garlic powder

1/2 c. shredded cheese

16 tooth picks soaked in water to prevent from burning

Directions:

Dice the jalapeños in half length ways, remove seeds and let soak in a bowl of ice water for 20- 30 minute. In a separate bowl mix cream cheese, shredded cheese, and garlic powder until smooth. Once the peppers have soaked remove from the water and pat dry. Fill each pepper with about 2 tbls cream cheese mixture and wrap with half of a bacon strip, secure with a tooth pick. Once you have filled and wrapped each pepper place the peppers on the grill, grill over medium heat for 20 minutes or until cream cheese starts melting. If the bacon begins to get too crispy you can place a piece of aluminum foil under the peppers to prevent burning.
