Make Ahead Breakfast Sandwich Recipe

This past Wednesday I spent about an hour preparing 26 freezer friendly breakfast options. I prepared 8 breakfast burritos (recipe on the blog), 6 breakfast sandwiches, and 12 egg muffins. If you're anything like me, waking up early to make breakfast just isn't going to happen. That is why I love these quick options that can be throw into the toaster oven or microwave and still allow me to eat a real breakfast. Let me know if you try this recipe or any variations! I think turkey bacon or a slim bagel could also make a great sandwich!

Below is the recipe for the breakfast sandwiches, I will try to get the egg muffin recipe up soon!!



Lite English Muffins

Turkey Sausage Patties (I purchased precooked frozen patties but you could for sure cook them on your own)

6 whole eggs

12 egg whites (I used egg beaters)

6 slices cheese (we use Sargento slim cut colby jack but you could use whatever you like)

Salt and Pepper


Using a small bowl about the size of your english muffin add one whole egg and 2 egg whites and a dash of salt and pepper, whisk until blended and microwave for 1-1 1/2 minutes or until the egg is cooked through. Continue this process until you have 6 egg muffins. While the eggs are cooking, lay out 6 sheets of aluminum foil, place sliced english muffin on foil and add one piece of cheese on each muffin. Once the eggs are cool (very important) place an egg and a frozen sausage patty on each muffin. Wrap the muffins tight in foil and place in a freezer bag.

Once your ready to eat just remove aluminum foil and wrap with a paper towel, microwave on half power for about 3 minutes or heated through. If we have time we will throw the muffin into the toasted oven to toast up the muffin but this is not necessary.
