Lebanese Chicken Recipe

Let me preface this post by saying I am NOT a good cook so if I can make this recipe you for sure can! I found this recipe online and there was very little prep work and you just popped it in the oven so I figured even I couldn’t mess it up. So lets get to it!

Ingredient List:

6 Drum Sticks (really any chicken!)

2 Turnips

2 c. Mushrooms (This might be a little much but I love mushrooms!)

1 large onion

2 Roma Tomato

1/2 c. diced Carrots

6-8 Cloves of garlic

2 tsp minced garlic

2 tsp. oregano

Juice of 1 lemon

2 Tbs Olive Oil

Directions:


Start by putting 1 tablespoon of olive oil in the bottom of a baking dish then place your drumsticks inside making sure they do not touch. Then cut all of your vegetables (and the tomato) into wedges (all around the same size) and place around the chicken. Next put about 6 cloves of garlic in the baking dish along with about 2 tsp of minced garlic. Drizzle the remaining olive oil over the chicken and vegetables. The last thing is sprinkling the oregano, salt and pepper, and squeeze the juice of one lemon over the top of the pan.

Place in the oven at 500° for 20 minutes then baste with the juices (we added about 1/2 c. chicken stock) and place back in the oven at 350° for about 20 more minutes or until the internal temperature of the chicken reaches 170°.

We really enjoyed this recipe the only thing I would suggest is to add more spices, but like I said I am a horrible cook so I don’t know what would be good! We will try to add a little spice the next time maybe red chili flakes or even adding jalapeños to the dish. If you give this recipe a try let me know what you think and if you added any extra spices!
