Hummus Crusted Chicken and Vegetables

Oh my gosh, this recipe was awesome! It might have been the easiest recipe to put together so that is just an extra perk. I used a Mediterranean hummus but I think trying a variation, maybe spicier with more flavor, would make it even better. Let me know if you try it out.


½ c. Hummus

2 medium Chicken Breast

1 large Lemon

1 c. diced zucchini

1 c. diced squash

½ c. sliced onion

1 tbls. Olive oil

1 tsp salt and pepper


  1. Preheat the oven to 450°

  2. Place vegetables in the bottom of a baking dish and drizzle with olive oil and salt and pepper

  3. Season chicken breast with salt and pepper then cover with humus

  4. Place chicken on top of the veggies

  5. Squeeze lemon juice over chicken and veggies

  6. Bake for 20-25 minutes until chicken is cooked through and veggies are tender
