"Healthy" Pizza

I have a great lunch idea for you today called tortilla pizza! It's an extremely easy recipe as all you need to do is preheat the oven to 425°, place your tortilla on a baking sheet and add your toppings and cook for 12-14 minutes. It really is that simple! I have done so many different "pizza's" and typically I use left overs from the night before. Using up left over roasted veggies is also a great option and we always have crumbled turkey sausage in the freezer (http://www.walmart.com/ip/Jimmy-Dean-Hearty-Turkey-Sausage-Crumbles-9.6-oz/15926942 I just sprinkle some of that with pizza sauce and mozzarella cheese and you have a supreme pizza. A few of my favorite pizzas are not typical pizzas, the first one you should try is shredded chicken, sautéed spinach, and olive oil and garlic instead of pizza sauce. One of my other favorites is tomato, mozzarella slices, basil, and refused balsamic vinegar. They are all so good!

Have you ever tried a tortilla pizza? What are your favorite toppings? I just thought it might be fun to try a Mexican pizza! Refried beans, peppers, and Mexican shredded cheese. Maybe I will try that tomorrow, there are just so many options.
