Frittata Recipe


The breakfast monster has struck again! I don’t know if it is because breakfast is typically easy or what it is, but when we are trying to scrounge together something to eat we typically lean towards breakfast for dinner. Tonight we decided to use our new cast iron skillet for the first time and make a Frittata. Let me tell you it was amazing! It couldn’t have been easier and there are so many variations of this recipe that you could use. Check it out below!


1 1/2 c. Egg White Beaters
3/4 c Shredded Cheese we used mozzarella
1/2 c Milk
2 c. Sliced Mushrooms
2 c. Spinach
1/2 c. diced onion
1 c. Jimmy Dean pre cooked crumbled Turkey Sausage (find it in the freezer section)
2 cloves garlic grated
Spices of your choice: we used chili powder, salt and pepper


Preheat the oven to 375° then start by sautéing your garlic and onions for about 3 minutes then add the turkey sausage, mushrooms, and spinach and sauté until spinach is wilted. Combine the milk, eggs, cheese, and spices and whisk together. After the spinach is sautéed, pour the egg mixture into the skillet making sure to cover all of your veggies. Let the sides of the egg set up for about 2 minutes. Then place the skillet in the oven and bake for about 20 minutes. Make sure to keep an eye on your Frittata, you want it to start browning a little bit on the top before you take it out. Remove from the oven and try your hardest to slide your frittata out of the skillet on to a cutting board and serve! (clearly that didn’t go very well for me!)
We served our frittata with salsa and it was awesome, let me know if you try this recipe or any variation. I am so excited to try some crazy variations…ham and cheese :) that was one of our many ideas!
