Egg Roll in a Bowl


Today I would like to share another awesome recipe! I had been craving asian food so I started scouring the internet for a recipe. I stumbled across a recipe for an egg roll in the bowl which is pretty much a recipe for the inside of an egg roll. It looked fairly easy so I decided to give it a go! Well it was amazing! It ended up being very high in fat because of the ground pork so the next time I make it I will use ground turkey but other then that I was extremely happy with how it turned out! My boyfriend even said he thought it was restaurant quality, something thats never been used to describe my cooking! Below you will find the recipe. Give it a try and let me know what you think.


3 cloves garlic diced

3 ribs celery diced

1 medium red onion diced

1 cup diced mushrooms

.75lbs ground pork

1 package cole slaw mix

4 tbsp Tamari Sauce

1-2 tsp rice vinegar

1 tsp ground ginger


Brown the ground pork in a skillet, once done remove from pan. Next sauté the onion, celery, diced garlic, and mushrooms until they are almost cooked through. After that add the cole slaw mixture and ground pork back into the pan and place a lid over the pan and let simmer for about 15 minutes. Finally add the Tamari sauce, rice vinegar, and ground ginger and let simmer for 5 more minutes.

Makes 2 LARGE servings

I changed it a little bit to make it easier, who has time to grate fresh ginger! Let me know if you make any other changes or try it with ground turkey. We will definitely be making this again!
