Creamy Spinach and Parmesan Spaghetti Squash


We received a spaghetti squash this weekend and I was trying to think of something new to do with it that was still quick and simple. I always feel a little guilty when we eat spaghetti squash as a side because that means I have ZERO green on my plate. I decided to try adding some sautéed spinach which I knew needed to be off set by something to get my boyfriend to even try it so I figured cheese would do the trick!


Spaghetti Squash

2 Laughing Cow Swiss Cheese wedges

4 Tbls Shredded Parmesan Cheese

3 cups Spinach

1 Tbls Minced Garlic

1 Tbls Olive Oil


Stab your spaghetti squash with a sharp knife all over, place on a microwave safe plate and put in the microwave for 10-15 minutes rotating every 5 minutes. Once the spaghetti squash is soft, let cook for about 10 minutes. Once its cooled cut in half and remove the seeds then shred the squash and put to the side. While the squash is cooling, sauté your spinach and garlic. After the garlic is done, add the laughing cow cheese and cook over low heat for 1 minute. Once cheese starts melting add the squash and parmesan. Stir until the ingredients are mixed well. Serve immediately.

When we make spaghetti squash we have always microwaved our squash to cook it, it's quick and easy, but most recipes call for you to roast the squash in the oven. I have never wanted to take the time to do that but I figured since I would be taking pictures for the blog I would give it a try....well let me tell you, it was STUPID!!! I will never try to do that again. The squash didn't taste any different and it was just a pain in the butt!
