Chicken Zoodle Alfredo Recipe

Last week I posted a picture on Facebook of our Thursday night meal, it was Chicken Zoodle Alfredo; let me tell you it was AMAZING! My very picky with “healthy” food boyfriend even said it was 80% as good as real chicken fettuccini alfredo which is a huge deal in my book! So to say this recipe is easy is an understatement and I am sure many of you could make this even better by making your own alfredo… but lets get real, who has time for that?! (or in my case the skill!) Lets get to it.


2 Large Zucchini
1 ¼ c. Prego Light Home Style Alfredo Sauce
12 oz shredded chicken (we used left overs from a rotisserie chicken we had for dinner the night before)
1 tbls Italian Spice Blend
1 tbls. Minced Garlic
Salt and Pepper
Begin by making your Zoodles with a spiralizer. Lay out 4-5 paper towels and put all of your Zoodles on top of them, then salt the zoodles generously, let sit for at least 15 minutes. The salt should draw a lot of the moisture out of the zoodles so add some more paper towels and ring out as much water as possible. Next, begin sautéing your zoodles along with the minced garlic for about 6-8 minutes (you want them to be a little firm still) drain the excess water off the zoodles and add the remainder of the ingredients and cook for another 2-3 minutes. You do not want your zoodles to get too soft, because they can get mushy. Add salt and pepper to and we topped ours with Parmesan cheese.
