Chicken Salad Recipe

A lot of days I am at the gym all day so I am required to pack my lunch. One of my go to lunch options is chicken salad. I am able to whip this up quickly on Sunday night and then eat it all week! Below I have listed a few different types of chicken salad I have made. I think my favorite is the traditional relish chicken salad but I love changing it up each week so I do not get bored! Each recipe makes about 3 lunches; I typically eat them on bread or a tortilla with romaine lettuce or with a few crackers. Just mix all the ingredients together; I actually think it tastes better after it has been in the refrigerator for a day! Let me know if you try and of them out.

Traditional Relish Chicken Salad

8 oz Shredded Chicken

¾ c. Greek Yogurt

½ c. Celery

¼ c. Sweet Relish

¼ c. Brown Mustard

Salt and Pepper to taste

Craisin Apple Chicken Salad

8 oz. Shredded Chicken

3/4 c. Greek Yogurt

½ c. Diced Apples

2 tbls. Craisins

Salt and Pepper to taste

Grape Chicken Salad

8 oz. Shredded Chicken

3/4 c. Greek Yogurt

¼ c. Mustard

1 c. Grapes halved

½ c. sliced Almonds

¼ c. Red Onion diced

Dash of Garlic Powder

Salt and Pepper to taste
