Cauliflower Shrimp Fried Rice

First let me tell you about the coolest thing ever! Trader Joe’s has riced cauliflower in the frozen food section!!!! Do you know what this means? You don’t have to spend 20 minutes grating cauliflower on your own it is just ready for you! Life changer!

Ingredients:

4 c. Riecd Cauliflower

16 oz peeled, tail off shrimp

½ c. frozen peas

½ c. shredded carrots

3 tbls. Tamari

1 and ½ tbls Sesame Oil

2 eggs

Directions: Begin by scrambling the 2 eggs along with ½ tbls of sesame oil and setting aside. Heat the remaining sesame oil in a skillet, we used a cast iron skillet that we thought worked really well. Sauté the shrimp until opaque, remove the shrimp and set aside. Next add the cauliflower, peas and carrots and sauté until tender, about 4-5 minutes. Add the egg and shrimp back to the mixture along with the garlic and tamari sauce and sauté for about a minute to combine all the ingredients.

Let us know what you think, I think the rice had a great texture and you really couldn’t tell that you were eating cauliflower.
