Cast Iron Skillet Chicken Breast

Unfortunately the nice weather is going to be totally gone sometime soon which means grilling outside will be a little miserable!! Last week I decided to try cooking chicken breast in the cast iron skillet and it turned out awesome! I was able to get a little bit of a char to the outside of the chicken and it was super easy! Check out the recipe below!

2 tbls Olive Oil

2-3 Chicken Breast (I made an extra for lunch the next day)

1 tsp. Garlic Powder

Salt and Pepper

Place chicken breast in a shallow bowl, rub half of the olive oil, salt and pepper, and garlic powder into chicken. Allow chicken to come to room temperature. Preheat the oven to 400°, once preheated place cast iron skillet on stove over high heat. Add the remaining olive oil to the pan once the pan is hot add the chicken. Sear on both sides for 2 minutes then place in the oven for 20 additional minutes. Once cooked through let chicken sit for 10 minutes to allow juices to cool.

Let me know if you give this recipe a try!
