Caprese Chicken Bake

Serves 2

2 oz Mozzarella Cheese

2 Chicken Breast

2 tbls Reduced Balsamic Vinegar (buy this at the store....you can make it yourself but it takes forever!)

1 Tomato

1/4 c. Chopped Basil

1 tbls Olive Oil

1 tsp Garlic Powder

1 tsp Oregano

Salt and Pepper to taste


Preheat the oven to 400°, line a baking sheet with parchment paper. Season your chicken with olive oil, seasonings, and salt and pepper; bake for 30 minutes. While your chicken is baking, slice your tomato and mozzarella and chop your basil. Next, remove the chicken from oven and add slices of mozzarella and tomatoes and broil for 3 minutes or until mozzarella is melted. Remove from the oven and drizzle with balsamic vinegar and chopped basil. Serve immediately!
