Burrito Bowl Recipe

Can you believe that Christmas is this weekend? where did this year go? Unfortunately, like we have talked about before the holidays sometime lead to over eating. In our family we celebrate Christmas eve with our extended family and have all different types of soup! My favorite soup is my grandma's homemade chicken noodle soup (with homemade noodles). Although it is probably not the healthiest choice, I have just a small bowl and get right back on track with my eating the next day. Don't let a bad day turn into a bad week. Below I have listed a recipe for Mexican rice, but it is made from cauliflower! It was super easy and really good. We paired our Mexican rice with shrimp, pico, guacamole, sour cream, and a little cheese to make a burrito bowl. Let me know if you try the recipe!

Ingredients:

1 teas. Olive Oil

1 tbls. Minced Garlic

3 c. Grated Cauliflower (I used the frozen cauliflower rice from Trader Joes)

8 oz Tomato Sauce

1/2 Beef Stock

Cilantro to garnish

Directions:

Sauté your garlic in a large pan until fragrant and then add the cauliflower. Next pour the tomato sauce and beef stock into the pan and let simmer until most of the liquid has evaporated, about 8 minutes. Garnish with cilantro and serve immediately.
